People in general love to talk about what they do, and enjoy appreciation for their hard work. So don't be afraid to ask, politely, a chef how he makes a certain dish or what is in the recipe. Keep the question general, and you might be surprised about the tips you can pick up from a simple question. If she doesn't want to share her knowledge, thank her and be on your way.
