Wherever you are, you need to take care that the blade hits a comparatively flexible material, for example wood or plastic, instead of a rigid material (metal, for example). Regular thumping on a rigid material puts the blade in risk: it will go blunt quickly. Even if it may seem necessary once in a while, you should avoid using your ceramic or stainless steel kitchen knives for forcing various things open, or as a replacement for a screwdriver. Remember that your cooking knives are kitchen tools, so they should be specifically used in the kitchen, when you are cooking. Even more, avoid using the backside or the sideways of any kitchen tools as knocking instruments save for the situations in which they are expressly intended to deal with such a job. If you are knocking or hammering things with your kitchen knives, you risk having the handle come untied or break. Do not put stainless steel knives to wash together with the rest of your kitchen tools in the dishwasher. It is preferable to wash your kitchen knives separately, by hand. As soon as you have washed them, remember to also dry them, if the handle is made of wood. If you care for the patina on a knife wood handle, you may polish it with mineral oil. To what concerns the blades, even if the majority of them are mainly created from high degree stainless steel, exterior corrosion or marks will unavoidably become visible. However, do not worry, you can clean the signs of oxidization on the blade with a soft rubbing powder. On the other hand, you have the alternative of the ceramic bladed knives. These ones come with a series of plus points, as compared against stainless steel blades. For one thing, they are completely resistant to corrosion. Second, they are very unproblematic to clean. Ceramic knives mean that

Mon, 14 Jul 2008 12:38:44 +0200 Oolong tea has a long and rich history that includes being one of the plants that were grown and prized by ancient Chinese emperors and today is prized for its many known health benefits around the world. The history of the plant that is botanically known as Camellia sinensis has been used throughout history for good health, healing and averting illness. These tea leaves generally originate from the Fuijan Province of China or the mountains of Taiwan and can also be referred to as Wu-Long tea. There is some evidence that the tea leaves from this region have a history of at least four hundred years; arriving toward the end of the Ming Dynasty. This tea now known for ensuring many different health benefits can be found as straight oolong tea or with other enhancements such as jasmine, orange blossoms and others. The process of manufacturing the tea is done with utmost care and in a fashion that has transcended the ages; from the time it is picked until the time it is packaged it undergoes a careful han d process. After the leaves are picked they are laid out to dry for a short amount of time where the oxidation process begins. Then the leaves are placed in baskets and shaken in order to bruise them. This exposes the juice of the leaves to the air whereby the oxidation process continues after which the leaves are laid out to dry for a second time. This process will oxidize the leaves from 20-80, depending on the type of final product desired. The leaves will then be fired to halt the oxidation. Then they are sometimes rolled while still freshly roasted and fired several more times. As a way of finishing the process the leaves are completely cooled and then fired a final time to give the oolong tea the special flavor while reserving the healthful properties of the leaves. Tea of all types have been under the microscope of late, and oolong tea has been studied and found to have numerous antioxidants, vitamins and minerals along with polyphenols, which all fit into a healthful regiment. Fri, 27 Jun 2008 08:47:03 +0200 For many people the pairing of wine and chocolate for a gift basket is a daunting task, and one they avoid if they can. But if you remember just a couple of simple rules, you can put together a wine and chocolate gift basket that will produce the purest of pleasures and a gift experience that surpasses the extraordinary. What Not to do The most common mistake people make when pairing wine and chocolate is choosing the wrong wine. Dry wines, for example, do not pair well with chocolate. Some of the most common dry wines are: Semillon, Pinot Gris, Pinot Blanc, and Gewurtraminer. If the wine you wish to give is dry, try coupling it with bread or cheese, or give a wine bottle gift. Light-bodied wines pair best with light, creamy chocolates. Full-bodied wines pair best with strong, dark chocolates. Which Wines, Which Chocolates As a general rule red wines pair most effectively with dark chocolate. Zinfandel, Sangiovese, Pinot Noir, Merlot, and Cabernet Sauvignon pair exquisitely with dark chocol ate and are the stars of the red wine and chocolate gift baskets. Pinot Noir and Merlot also pair nicely with milk chocolate. White wines, because they are drier, are tougher to pair with chocolate. The best white wine and chocolate baskets come with either Sauvignon Blanc or Riesling and milk chocolate. However, another fine choice is Chardonnay and French Vanilla chocolate. Dessert wines are the free spirits of the wine and chocolate baskets; they follow their own rules. Any kind of chocolate (almost) will pair with Champagne and Sparkling wine, while Port pairs best with dark chocolate and Sherry with white chocolate. Stick to the Basics So really, putting together the perfect wine and chocolate gift basket is pretty easy. Remember the rules. Choose the wine and find the chocolate to pair it with, or choose the chocolate first and find a wine to complement it. You will be amazed at what you can come up with and gratified by how well these gifts are received and appreciated. If this is

There are thousands of different wines to pick from, from every varietal and corner of the world. The process of choosing wine for your wine bottle gift does not have to be hard however, as long as you know how to go about it. Keep in mind that certain types of wine are associated with particular types of meals, an d so if you are giving the wine gift at a dinner party for instance, see if you can find out what is being served for dinner and then you will be able to choose just the right wine for the meal prepared. Red wine is considered as being appropriate with red meat and hearty pasta dishes, and white wine goes well with fish and chicken. Remember though that these are not hard and fast rules and you can switch it up if you want, but these are just the basic guidelines that you should follow. You may also want to include a wine bottle gift bag, which just really tops the gift off and brings everything together. You can usually find these bags at the same stores that retail the wine bottle gifts otherwise you can locate them at specialty wine gift stores. No matter who you are giving the gift to they are sure to love it. Some people will drink the wine while others will use it to decorate and never open it. The point is that a wine gift is elegant and classic, and something that all people are going to enj

The problem that I have is that I do not like cooked onions, and if a recipe calls for them, I wont make it. My husba nd thinks I'm being silly, but I just can't eat them. I like them raw on a burger or hot-dog, but I cannot stand to have them in slow cooker recipes. Unfortunately, this cuts down my options quite substantially. If you feel that you have not learned anything new thus far, there is a whole new realm of information in the rest of this article. You may not be as picky as I am, and if that is the case, you should have no problem finding slow cooker recipes that you will love to make for your family. For the most part, you simply add the ingredients to your cooker, turn it on and let it go all day. You shouldn't even have to stir it. You can even find great slow cooker recipes in your local grocery store. They have kits that are already put together and you usually find them in the freezer section. All you have to do is dump the contents into your crock-pot and turn it on. It doesn't get much easier than that. I may end up having to find slow cooker recipes that I can alter. Though this might take some doing,

Thu, 12 Jun 2008 15:22:10 +0200 Sweet Potato in their many varieties are a highly nutritious food, easy to prepare, heavenly tasting, and extremely versatile on any menu. Yet, they are undervalued, ignored, and underappreciated. Some people enjoy the wonderful flavor and health benefits of sweet potatoes year round, but for many families sweet potatoes appear on the table at Thanksgiving and only then. We know of some folks who have never even eaten a sweet potato. Sweet potatoes were actually born in Mexico, Central, and South America, as well as the West Indies. Their botanical name, Ipomoca batata, was derived from the American Indians of Louisiana who were growing them in native gardens as early as 1540. The Indians referred to sweet potatoes as batatas. In his first voyage to the West Indies Columbus discovered many new foods which he brought back to Spain. Sweet potatoes were among his ship's treasures. The Spanish relished them and began cultivating them immediately. Soon they were profitably exporting them to England where th ey were included in spice pies to be devoured at the court of Henry VIII. The French, not to be outdone, planted them at the request of Louis XV. They were favored in France only until his death and then lost popularity for thirty years until the Empress Josephine, who was from Martinique, craved them. It was then that sweet potatoes again became trendy in Paris restaurants for a time, but once more fell into obscurity. It was the Portuguese who carried Sweet Potatoes to Asia and Africa where they have become an important staple of the diet even today. There are two major varieties of sweet potatoes, the yellow, drier, more mealy kind with lighter beige colored skins, and the orange, more moist, sweeter ones with reddish skins that are usually called "yams." True yams, however, are nothing like the sweet potato, but are a tuber native to Africa, very starchy, not very sweet, and grow as large as 100 pounds. For more details visit http:www.indomunch.com
Thu, 12 Jun 2008 04:24:43 +0200 It is generally thought that seafood is a functional food it has the ability to prevent disease or in some cases reduce existing conditions to the point of making them manageable. This could be the opinion of some people who had related personal experience or those who read about it. Most of the nutrients, minerals, fatty acids, and amino acids -that our bodies need to develop through childhood and remain healthy throughout life - are present in seafood. Many people laud the virtues of seafood, though some individuals dispute this. Seafood is a natural functional food; with no need to be fortified with other functional food ingredients to make it healthier for you. In fact, some of the health benefits of seafood will be lost, if you bread and deep-fry it. So it is best to grill, bake, steam, broil, boil, microwave, or lightly saut your seafood. This could be the opinion of some people who had related personal experience or those who read about it at chinesefoodsrecipes.com. Without getting too tec hnical, you realize why seafood is such a great functional food. For development and maintenance of musculature throughout our lifetime, our bodies need amino acids - proteins that make body muscle and more information at chinesefoodsrecipes.blogspot.com. Good health is the result of nine amino acids that our bodies need on a daily and all seafood contains all nine of these amino acids. No more, no less! Another reason why seafood is a functional food is it contains omega-3 fatty acids needed to remain healthy. Along wit homega3's, seafood contains an abundance of this polyunsaturated fatty acid. In some fish species like sablefish, Anoplopoma fimbria - the omega-3 literally oozes from its flesh. Omega-3 fatty acids reduce the bad LDL blood cholesterol levels and increasing the good HDL cholesterol levels. This reduces your chances of cardiovascular disease - reduced chance of strokes and heart attacks. On the Sea Grant, University of Delaware web site is a statement that: Asthma, arthritis, dia

Sat, 31 May 2008 13:36:19 +0200 Samuel Cate Prescott was a professor at M.I.T.(Massachusetts Institute of Technology). He was one of the top food scientists in the world. His dream wasn't just making food safe but ideal. A contemporary Boston Daily Advertiser story on him even predicted that one day, thanks to his hard work, the "application of growth-producing rays will bring forth cows the size of brontosauri, roosters the size of pterodactyls."The National Coffee Roasters Association (a group that had long been searching for a novel way to boost coffee sales) decided the publicity campaigns weren't enough, they needed "a college education". So they brought their attention to this Prescott guy. They promised a state-of-art coffee research laboratory and staff, if he would uncover the scientifically exact way of creating the Perfect Cup of Coffee. He accepted. He used the latest technology to bring coffee's Platonic ideal down to earth. The method was quite simple: He will make the c offee every way possible, and get "professional" taste tester to judge the outcome. They tried out all the possible variables: Brewing in pots made of copper, aluminium, nickel, glass and other materials. They dripped, pressed and percolated it played with the temperatures different grinds and steeping times.Every day, Prescott went to the MIT's cafeteria, with a tray of freshly brewed "scientific" coffee, cream and sugar. Fifteen women, the "tasting squad" shared their experiences with him, and Prescott adjusted his brewing accordingly.Three years and an enormous amount of coffee later, he knew that coffee could not be improved, so he shared his results, a set of precise rules as unbendable as the law of gravity: 1. Use one tablespoon of freshly ground coffee for every eight ounces of water. 2. Force these grounds through water that is a few degrees

Wed, 07 May 2008 02:13:29 +0200 Born in upstate New York, K was the only one who actually used our pots and pans. She bought things like produce, and dairy products. A few times, she whipped up this Saltine-butter-chocolate dessert that I cant even think of without salivating all over my desk. (Seriously, Saltines? Who knew they didnt have to taste like drywall?) One of her favorite concoctions, which I had never heard of at the time, and now ordermake at every opportunity, was the lassi. Essentially a thick Indian yogurt drink, lassis are intended to calm taste buds during a spicy meal. But, much like its fruity cousin the mango lassi, the sweet lassi is also delicious on its own.
Tue, 06 May 2008 21:03:33 +0200 Ice cream is often called "The Great American Dessert". Although the product is typically American, the U.S. cannot claim its origin. Very little is known of the early history of ice cream; however, the product is definitely known to have been introduced from Europe. The ice cream industry as we know it today, however was wholly developed in the United States. Ice cream undoubtedly evolved from iced beverages and fruit ices that were popular in early medieval periods, some of which probably contained milk or cream. The practice, in early times, of cooling drinks in ice and snow containing salt is a matter of record. It seems possible that in overcooling some of these punches, the "ice" was discovered. At any rate, various records of frozen fruit flavored ices have been found in European history and frozen ices are still more popular in continental Europe than in the United States and Canada.

Fri, 02 May 2008 04:16:15 +0200 Ice cream is often called The Great American Dessert find out the history behind ice cream - sundaes and cones. Ice cream structure is both fascinating and confusing. The way we perceive the texture of ice cream when we consume it (smooth, coarse, etc.) is based on its structure, and thus structure is probably one of its most important attributes. Fried Banana ice cream has been so hot recently that my thoughts have turned to ice cream. Ice cream is about the simplest recipe I know for a cool desert. Smooth, creamy cherry ice cream with heart-shaped chocolate covered cherry candies and a thick chocolate sundae sauce swirl. I have served baked bananas as dessert many times. Slit bananas sprinkled with brown sugar, lemon juice, and cinnamon, baked till soft, served with or without ice cream. That sugary lemony sauce looks and tastes divine, full of the ripeness of bananas. But banana in ice cream sounded intriguing.

Tue, 29 Apr 2008 20:51:10 +0200 This noodle dish, literally translated as "Noodles from Siam" actually has its roots in nearby Malaysia, where it is usually eaten for breakfast (which explains the addition of boiled eggs). However, I find it also makes a great dinner dish. Vermicelli noodles are surrounded by a rich shrimp-based broth that is deliciously unique in taste. To serve it the authentic way, scoop noodles into bowls along with the sauce, then place all other toppings on the table and let your guests put the final dressings on this fun and flavorful dish. But be forewarned: these noodles can become addictive! Taste one to make sure it is soft enough to eat. If not, place pot over medium heat until noodles are done. Drain and set aside. To serve, place generous mounds of noodles in serving bowls and ladle soup over top (bowls should be at least 13 full of the spicy soup). Now either add the other toppings yourself, or place in bowls and allow guests to add their own. Serve with slices of key lime on the side, as well as additional red chilies or chili sauce, either store-bought or my own homemade Nam Prik Pao Chili Sauce Recipe. ENJOY!
