Today my daughter and I attended a birthday party for Erica's friend Ali. Ali's Mom Nancy made this dish that she said is Ali's favorite. Nancy called it BBQ Chicken.
It was so good, I put it on a burger bun instead of a hamburger. When I asked Nancy for the recipe to post here she laughed . This absolutely qualifies as an easy meal. Served on buns with coleslaw and corn on the cob..yum.

The Carob tree, Ceratonia siliqua, is a leguminous evergreen shrub or tree of the family Leguminosae (pulse family) native to the Mediterranean region. It is cultivated for its edible seed pods. Carobs are also known as St. John's bread. According to tradition of some Christians, St. John the Baptist subsisted on them in the wilderness. A similar legend exists of Rabbi Shimon bar Yochai and his son.
Oxtails (beef tails) are a popular southern dish, but they also have roots in European cooking.
